Cacao on a metate, morning side-light, hands grinding

About this experience

Four beverages. Four histories. Each one connected to this land by centuries of practice.

You'll grind cacao on a metate the way it was done before chocolate existed as a word. You'll taste tejate — corn, cacao, and mamey seed mixed by hand in a painted gourd. You'll drink coffee from a finca in the cloud forest above us. And you'll sit with a mezcalero who will pour you something that took eight years to grow and explain every step of how it got into your copita.

Each tasting comes with the story. The technique. The reason it matters.

What you'll encounter
  • Cacao ground on stone — pre-Hispanic technique
  • Tejate preparation with a local cook
  • Sierra-sourced coffee tasting
  • Mezcal at a private palenque
  • The history behind each drink
